The cuisine

Our in house chef specializes in high end Franco-Moroccan cuisine. All meals are prepared on demand to guaranty the utmost freshness and flavor. Therefore it is recommended to reserve/order your meals in advance to avoid waiting (it takes about 2 hours to prepare your meal).

All the products and ingredients used are local, extra fresh, and completely organic, including all the fruits and vegetables. Rediscovering the "true" taste of a tomato is a truly unbelievable… And it is the main ingredient of a typical Moroccan dish: the "chouchouca." The vegetables in Moroccan salads make for a delicious and colorful side dish in our meal

The numerous spices (persil, coriander, cumin, ginger...) are utilized according to the local culinary traditions but our dishes are never too hot.

The dromedary (usually called camel): Guelmim is the limit of the zone where dromedaries are raised for butchery. It is grilled, skewered, or prepared in tag (traditional Moroccan dish consisting of slow-cooked meat, fruit and vegetable)… Its taste is refined, very close to beef.

Sheep cooked as "mechoui" is also one of our specialty. Prepared for groups (starting at 15-20 people), it is necessary to order it 2 month in advance since we feed it a special diet on the premise during that time in order to enhance its flavor even more.

The couscous is often prepared on Fridays, according to Moroccan traditions, hand prepared by women.

A barbecue is being built with stones from the region and will allow us to prepare high quality grilled food in quantity.

Fish: corbina, bass, dorado… is brought still alive by the fishermen and served in tagine or grilled… When it's the season, the small pink shrimps abound in the region and make a great appetizer. We also use them in omelets and in tomato sauce for pastas

Fruits are available here when you can't find them in Europe yet/anymore… Eating a cantaloup or some strawberries in january or february is a must!

For deserts, we make traditional tarts, but also tart tatin, fruit salads, fruit Tajine, and chocolate mousse for children and adults alike.

All those dishes (and many others of course) are available in both our restaurants, for a total capacity of about a hundred people, as well as on the terrace when the weather allows.

But we can also adapt to special occasion. For instance, in may 2006, we welcomed the participants of the 2CV Citroen Rally. 230 people were able to enjoy our couscous as well as entree and desert, seating at a table in a large tent.

We can also prepare delicious picnics for people on the go. You need to reserve it the night before, as well as the bread for the breakfast.
